STANDARD CHARTERED HONG KONG MARATHON 2010 “RECIPES FOR SUCCESS”


Chicken Run

Ingredients:

Chicken breast (cut)

500g
Mushrooms 300g

Marinade:

Garlic

2 cloves (crushed)
Lemon juice 1
Pepper 1 teaspoon
Salt 1 teaspoon
Honey 2 teaspoons
Red chili powder 1 ~ 2 teaspoons (to taste)
Olive oil 3 teaspoons

Seasonings:

Yoghurt

1/2 cup
Lemon zest 1

Preparation:

  1. Combine chicken breast, mushrooms and marinade ingredients. Marinate for 2 ~ 3 hours.
  2. Thread chicken breast and mushroom in sequence. Place on a preheated grill at 75 degrees and grill for 15 minutes.
  3. Heat up the grill pan with a little oil and cook over medium-high heat for about 1 minute.
  4. Mix yoghurt and lemon zest together to make sauce; serve with dish.

Ocean’s Heaven

Ingredients:

Cold soba noodles

300g
Prawns 4 (wash and remove shells)

Marinade:

Garlic

2 cloves
Olive oil 3 teaspoons
Pepper 1/2 teaspoon
Salt 1/2 teaspoon

Cold soba noodle sauce:

Lemon juice

1/4
Dried bonito water 200ml (soak 50g dried bonito in 200ml hot water.)
Low-sodium soy sauce 100ml
Mirin wine 100ml

Preparation:

  1. Wash prawns and remove shells. Stir in marinade ingredients. Marinate for 10 minutes.
  2. Heat up the frying pan with a little oil, cook over low heat for 2 to 3 minutes.
  3. Cook the noodles according to the package instructions. Mix noodle sauce with drained noodles.
  4. Place fried prawns atop noodles, serve.

Tropic Wonder

Ingredients:

Banana (sliced)

250g
Vegetable oil 2 teaspoons
Egg whites 2
Egg 1
Milk 250ml
Self-rising flour 400g
Sugar 160g
Soda powder 1/2 teaspoon
Lemon zest 2 teaspoons
Chocolate chips 50g

Preparation:

  1. Mix banana, 1 teaspoon vegetable oil, egg whites, egg and milk and stir with stirrer.
  2. Blend sifted flour, sugar, soda powder, lemon zest and chocolate chips together in a large bowl.
  3. Combine the banana and flour mixture and mix well.
  4. Preheat oven to 190 degrees. Spread 1 teaspoon vegetable oil evenly in the cake pan. Pour the mixture into two-thirds pan and bake for 25 minutes.
